Here’s six delicious, nutritionally balanced recipes from Get Lean, Stay Lean that the whole family will love

260g (9 1/4 oz) fresh or frozen berries, thawed (mixed or whatever type you like)
2 large free-range or organic eggs
185ml (6 fl oz) buttermilk (or a mix of lower fat natural yoghurt and milk)
300g (10 1/2 oz) wholemeal (wholewheat) flour
2 teaspoons baking powder
90g (3 1/4 oz) honey
60ml (2 fl oz) extra virgin olive oil (light flavoured)
40g (1 1/2 oz) no added sugar dark chocolate, chopped into small chips

1 Preheat the oven to fan-forced 180°C (350°F/Gas 4). Line a 12-hole muffin tin with non-stick muffin cases.

2 Sift the flour and baking powder into a bowl.

3 In a separate bowl, whisk together the eggs, buttermilk, honey and extra virgin olive oil.

4 Pour the wet ingredients into the dry and mix gently to combine, but take care not to over-mix or you’ll end up with heavier muffins. Gently fold through the berries and dark chocolate chips.

5 Spoon the mixture into the muffin cases and bake in the oven for about 25 minutes or until the muffins are a golden brown colour and a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool. Serve.
