Established by father and son duo Davide and Egidio Galbani, Galbani cheese dates back to 1882 in Ballabio, a small village nestled in a lush green Alpine valley, where it was first made.

The quality and versatility of Galbani Mozzarella makes it perfect for a host of dishes. Containing about half the fat and less salt than cheddar cheese, Galbani Mozzarella is a great choice to include in healthy mid-week recipes!

Galbani Mozzarella Baked Caprese Salad

Serves 4 | Prep 10 mins | Cook 10-15 mins

Galbani Mozzarella 250g
1 box mixed cherry tomatoes (yellow and red are great)
1 head of basil
1 tablespoon olive oil
Salt and pepper
Crusty bread, to serve (optional)

1 Leave the smallest cherry tomatoes whole, squeeze and crush the other ones. Add basil & salt, and place into a baking dish

2 Tear up mozzarella and pit on top of the tomatoes, drizzle with olive oil. Place in the oven at around 180C

3 Bake the dish for 10-15 minutes or until the cheese is golden brown. remove and finish with a little fresh mozzarella and more basil.
