Galbani Mozzarella Baked Caprese Salad
Serves 4 | Prep 10 mins | Cook 10-15 mins
• Galbani Mozzarella 250g
• 1 box mixed cherry tomatoes (yellow and red are great)
• 1 head of basil
• 1 tablespoon olive oil
• Salt and pepper
• Crusty bread, to serve (optional)
1 Leave the smallest cherry tomatoes whole, squeeze and crush the other ones. Add basil & salt, and place into a baking dish
2 Tear up mozzarella and pit on top of the tomatoes, drizzle with olive oil. Place in the oven at around 180C
3 Bake the dish for 10-15 minutes or until the cheese is golden brown. remove and finish with a little fresh mozzarella and more basil.
